Almond-Coconut Tilapia

I tried this new recipe last week and it was so good it is back on the menu for this week. I scored an awesome deal on Tilapia last week at Meijer so we have plenty. They had 1 lb. bags for $5.99 and they were B1G1 free, plus I had coupons for $2.00 off per bag. So I got them for like .99 cents a bag!!! Yeah for Meijer MealBox! Now for the recipe...

Tilapia prep:
4 Tilapia fillets
salt
pepper
paprika
2 Tbsp melted butter

Preheat oven to 350 degrees (If using frozen fish, check the packaging to see what temperature to cook the fish at.) Spray a baking dish with non-stick cooking spray. Place tilapia in dish flesh side up (If your fish still has skin on...I use the frozen kind that is skin free.). Season fillets with salt, pepper, and paprika. Use as much or little as you like. Brush the fillets with the melted butter. Place in oven and bake for about 5 minutes. Remove and add about 2 Tbsp topping per fillet. Put fish back in the oven and back 5-8 more minutes.

Topping:
1/3 cup slivered almonds
1/3 cup coconut flakes
1/3 cup bread crumbs
4 Tbsp melted butter

Mix all ingredients together and top fish after about 5 minutes of baking.
