fish taco {recipe}

Tilapia is a fish that I cook with often.  It is fairly inexpensive and I find it on sale often.  Plus it's not too fishy for me...taste or smell wise.  We tried these fish tacos several months ago and fell in love with them!  They make it on the menu monthly at least!

Fish Tacos 
Ingredients:
4 tilapia fillets
1/2 tsp cumin
1 tsp paprika
1/4 tsp garlic powder
salt
pepper

Directions:
Place thawed tilapia fillets on plate or cutting board.  {I put my frozen tilapia in a ziplock bag and place them in the sink with water for about 15 minutes or so.}  Sprinkle tilapia with salt and pepper.  Mix together other spices and rub on both sides of the fillets.  Cook in a skillet on medium heat about 5-6 minutes per side.  The fish will flake easily with a fork when it is done.

Cilantro lime sauce
2 Tbsp sour cream
1 Tbsp lime juice
1/2 tsp cilantro
1/4 tsp cumin
1/4 tsp garlic powder

Mix together in small bowl and serve on fish tacos!

Winter day fun...

We are definitely feeling the WINTER weather this week.  It is C.O.L.D....COLD!  Little Bit has been out of school due to cold weather so she has been coming to Preschool with me....cause we have still been in session.  This week we are talking about snow and snowmen.  Here are a couple of fun activities we have done that would be great to do with your kiddos at home when you are couped up due to the cold!

Do you want to build a snowman?...cotton rounds for body, buttons for eyes, ribbon pieces for scarves, little sticks for arms, foam cut into hats and triangle "carrot" noses.


Sparkly snow sensory tray...I saw this on Pinterest.  Instead of salt I used sugar and glitter.  I let the kids use their finger to draw in the "snow".  Then use a pencil to form shapes.


Shaving cream....This makes great faux snow and the kids have a blast with it!  Plus it is easy clean up!!!  They can have fun just playing in it with their hands but it's also fun to drive cars in the "snow" or walk animals through it to make tracks!

Disposable dinnerware organization!

I LOVE to organize!  The new year always feels like a fresh start and a great time for some of those organizing projects that have been pushed aside because of the busy holidays.  I have a cabinet in my kitchen where I store paper plates, cups, napkins, plastic utensils and the like.  It has really been driving me crazy for awhile but I just haven't done anything about it....until now!

Here is the before mess...which was actually worse, cause I had already taken a few things out before I remembered to take a pic!



I decided I needed some containers to get this mess under control!  I picked up a small 3 drawer organizer and a large plastic bin.  I also used a metal colander that I had in the cabinet.


I started by filling up the large bin.  I stacked the cups in a row along one side.  Then I stood the plates up on the other side.  The bowls, fit nicely inbetween and smaller beverage napkins are in the front.  I also had a few paper lunch sacks that went along the side of the plates.  

 

I used the 3 drawer organizer to contain the utensils.  I labeled the drawers using some letter stickers!  {I love this!!!}  Then I put our everyday napkin overflow in the metal colander.  It fits perfectly on top of the drawers. 
 

I'm so pleased with how it turned out!  No more cabinet chaos!!!
