Creative Corner...Scrap Card

Here is a quick little card I made with the scraps from my June 2nd layout packet.

Zucchini Fries...

We have been blessed with many zucchini from our garden this year. I have already made several loaves of zucchini bread and have sauteed zucchini about every other night for the past couple of weeks....so needless to say we are ready for some new recipes. I found this one for zucchini fries on weightwatchers.com and tried it last night. Definitely something that will be on the menu again!

Ingredients:

	4 spray(s) olive oil cooking spray
	1 tsp Italian seasoning
	1 1/2 tbsp all-purpose flour
	3/4 tsp table salt
	3/4 cup(s) dried bread crumbs, panko-variety suggested
	2 medium zucchini, about 7-inches each, cut into 4 chunks, then each chunk halved
	2 large egg white(s), whipped until frothy (almost soft peaks)

Directions:
Preheat oven to 425ºF. Coat a baking sheet with cooking spray. In a small bowl, mix together Italian seasoning, flour and salt. Place bread crumbs in another small bowl.

Dredge a zucchini fry in flour mixture and then dip into egg whites; dredge in bread crumbs. Place coated zucchini on prepared baking sheet and repeat with remaining ingredients; liberally coat with cooking spray.

Roast, turning once, until desired crispness, about 12 minutes. Yields about 8 fries per serving.

...is what Little Bit said whenever she saw one of those American flags she is holding in the picture. They were being passed out at the 4th of July parade we went to. Somehow she ended up getting her hands on 3 of them. She did put them down long enough to pick up some candy being thrown out!

Happy 4th of July!

Hope everyone is having a wonderful Independence Day! I am enjoying a weekend with family.

Crock Pot Chicken Fajitas

I recently attended a Pampered Chef show and one of the dishes the consultant made was Chicken Fajitas. She made it in the covered baker but I don't have one so I decided to try the crock pot instead. I am not a huge fan of peppers but how all the flavors combine while cooking is just yummo!

Ingredients:
2-3 chicken breasts (i used frozen ones)
1 each of red, green & yellow peppers, chopped
1 medium onion, chopped
3 gloves garlic, pressed
1 packet taco seasoning
1 cup chicken broth

Directions:
Add all ingredients to crock pot and cook on low for 6-8 hours....depending on your crock pot. Once cooked I just used a fork and shredded up the chicken. We ate ours with flour tortillas, shredded cheese, tomatoes and sour cream.
