Chili Cornbread Casserole...

I was looking for something to do with some leftover turkey from Thanksgiving and I was going to put it in a big pot of chili but decided to make this instead.  I have made it before without the turkey so feel free to omit that if you don't have any on hand.  The hubs and I really enjoyed it!

Ingredients:
1 can chili or 2-3 cups leftover chili {enough to cover the bottom of an 8x8 pan}
1 cup shredded turkey {leftover from Thanksgiving!}
1 package cornbread mix
1 egg
1/3 cup milk
1/3 cup frozen corn
1/3 cup shredded cheese

Directions:
Coat an 8x8 pan with non-stick spray.  Spread chili in bottom of pan.  Top with shredded turkey if desired.  Combine cornbread mix, egg, milk, corn and cheese.  Spread the cornbread mixture over the top.  Bake in 400 degree oven for 20-25 minutes.

This sounds really good! I'm going to pin it and try it the next time I have chili left overs. I remember trying something very similar years ago and had lost my recipe! Thank you for sharing. :)
