Microwave Peanut Brittle!

I love peanut brittle!!!...{but could never make it right}. I remember trying to make it several years ago the old fashioned way...on the stove, heating your corn syrup mixture to a certain temperature and what not. Well, I could never get it to turn out right. Then I found this microwave recipe and thought it was too good to be true...but it turned out GREAT!

Ingredients:
1 1/2 cups roasted peanuts
1 cup sugar
1/2 cup corn syrup
1/2 tsp salt
1 Tbsp butter
1 tsp vanilla extract
1 tsp baking soda

Directions:
In a large microwave-safe bowl, mix peanuts, sugar, corn syrup and salt. Cook on high for 6-7 minutes; mixture should be bubbly and peanuts lightly browned. Quickly stir in butter and vanilla; cook 2-3 additional minutes. Add baking soda and stir quickly until mixture is foamy. Immediately pour onto a greased baking sheet. Let cool for 15 minutes or longer. Break into pieces and store in an airtight container.
