When I was visiting family last week I went to a Pampered Chef demo and the lady made chocolate lava cake in the deep covered baker. She calls it her crock pot on steriods! It baked the cake in 10 minutes in the microwave! Well I don't have the deep covered baker but I do have the large micro-cooker and thought why wouldn't that work?! So I tried it out and guess what...I got cake from the microwave! The only downside is you can't do the whole cake at once. Even though it is called the large micro-cooker, it's not large enough for a whole cake to bake in! ;) So I mixed up the batter and did half a cake, refrigerated the batter and baked the other half later!
Ingredients:
1 chocolate cake mix
3 eggs
1 1/3 cup water
1/2 cup oil
1 can chocolate frosting
Directions:
Coat micro-cooker with cooking spray. Mix cake as directed on box. Pour half the batter into micro-cooker. Drop spoonfuls of icing on top of the cake batter, using about half the can. Place in microwave for 6-8 minutes. Toothpick should come out clean when cake is done!
Enjoy the cake warm with some vanilla ice cream....YUMMO!

birthday organizers...
For Mother's Day I had the idea to make our mom's a birthday card organizer. I had a couple ideas on how to do it but nothing was panning out the way I wanted. I was in Big Lots one day and saw these receipt organizers and thought they would be perfect for this project! They had just the right amount of pockets....12....how perfect! {and only $1 each....what a deal!}
So I covered the fronts...
...and added a piece of cardstock to the front of each pocket with the months and lines to write birthday's, anniversary's or other important dates to remember.
The stamp is from a Unity set call Let's Get Scrappy. Looks like it might be retired, here is a pic...
Then I circled the month and drew lines for the dates...
I also put a few hand stamped cards {like this one} in a few of the pockets! I think they turned out pretty great if I do say so myself! ;)
