Banana Bread

I found this lower fat banana bread recipe when I had some bananas going bad that I didn't want to go to waste. It is super easy to whip up and tastes yummo! I do add chocolate chips, which weren't in the original recipe, but a girls gotta have her chocolate, right!!!

Ingredients:
1 1/2 cups flour
3/4 cup white sugar
1 1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground cinnamon
2 egg whites
1 cup mashed banana
1/4 cup applesauce
1/2 cup chocolate chips

Directions:
Preheat the oven to 350 degrees F. Lightly grease an 8x4 inch loaf pan.

In a large bowl, stir together flour, sugar, baking powder, baking soda and cinnamon. Add egg whites, bananas and applesauce; stir until combined. Mix in chocolate chips. Pour batter into prepared pan.

Bake in preheated oven for 40-45 minutes or until a toothpick inserted into center of the loaf comes out clean. Turn out onto wire rack and allow to cool before slicing.

Enjoy!

Creative Corner...stitched card

I just love this card! The colors and the stitching...just make me smile! This card was for a challenge Kristina Werner does every Friday on her blog and at Two Peas. The segment is called Finally Friday. The challenge this time was to use pastel colors. I loved her card layout...so I went with that. I used the paper-piercing template from the Stampin' Up mat pack to get the holes all nice and lined up for the stitching.

Recipe:
Paper ~
kraft, basic grey two scoops collection pack
Accessories ~
buttons, rub-ons, embroidery thread, corner rounder

Creative Corner...LOVE

I created this card for A Year in Cards, January 2010 over at Two Peas in a Bucket. The challenge was to create a love themed card. I used paper from the BasicGrey lemonade paper pad and a crocheted heart I made! I learned how to whip these up from this great video tutorial!

Creative Corner...heart art

Sausage Cups

So I had sausage cups on the menu last week and said I would share the recipe. These are so simple to put together and taste yummo!

Ingredients:

Wonton Wrappers
1 lb ground sausage
1/2 cup ranch dressing
2 cups shredded cheese, your choice

Directions:
Preheat oven to 350 degrees F.

Crumble sausage into medium skillet. Cook over medium heat until lightly browned, stirring occasionally. Drain.

Spray muffin tins and insert wonton wrappers to form a small cup. Bake 5 minutes in preheated oven. Allow wrappers to cool.

Mix sausage, cheese and ranch dressing together. Fill won ton wrappers. Bake for 5-10 minutes until bubbly.

{The sausage mixture is something you can make a day or 2 before you are ready to use...just store in fridge.}

Other ideas using wontons...
Taco cups {I used leftover taco meat mixed with cheese and filled wonton wrappers as in above recipe.}
Crab rangoon {I tried this recipe but cooking time needs to be shortened. Think I might try this recipe next time.}

Creative Corner...heart {day} shirt

I got this pink shirt on clearance at Walmart for like $1.50 after Valentines Day last year. It had an image on it that I wasn't crazy about so I thought why not turn it into something new!

To make the circle, I used my Creative Memories circle cutter and cut the size circle I needed out of paper. Then I pinned the paper to the fabric and cut out using pinking shears. Next I cut out 2 hearts of felt and whip stitched those on the fabric circle with embroidery thread. Then I used wonder under to apply the circle to the shirt. I finished it off by sewing on a little flower button on the brown heart.

What a cute remake to wear for Valentines Day and beyond!

Creative Corner...wintery thanks

To continue along with my post yesterday about reading winter and snow themed books...I thought I would share a wintery card. I used elements from Card Calendar: A Year's Worth of Celebrations {2010 Day-to-Day Calendar} that my mother-in-law got me for my birthday. This calender comes with thick cardstock-like pages that have three days per page. Some of the pages make special cards like pop ups, while others are punch outs...like I used for this card...

Recipe:
Paper ~
white, choc. chip
Stamps ~ retired SU word set
Ink ~ choc. chip
Accessories ~ ribbon, modern label punch, cord. button, card calendar

{check} this out...

Since the groundhog saw his shadow yesterday and we are in for 6 more weeks of winter...that means you have plenty of time to read some snow and winter themed books! These are a few Little Bit and I have been enjoying over the past couple weeks...

There was a cold lady who swallowed some snow! by Lucille Colandro

I am snow by Jean Marzollo

Hello, snow! by Hope Vestergaard

The snowy day by Jack Ezra Keats

{don't forget...utilize your local library for reading material!!!}

Here are a few activities we've done to go along with the wintry theme...

number snowflakes...{these continue to be a hit} For the fall months I numbered silk leaves 1-9 and she loved them so much, I found foam snowflakes at Hobby Lobby and did the same with them.

paper snowflakes...cut snowflakes out of paper and tape them on the windows or throw them up in there like it's snowing!

playing in the snow, of course!...building a snowman, sledding, or just running around in it.

Menu Plan Monday

Have you ever used wonton wrappers before? Well my first experience using them was making sausage cups for a baby shower brunch. You use muffin tins to form the "cup" and then fill with yummy goodness! I made the sausage cups recently and had extra wonton wrappers...so be watching for a later post with this recipe and a few other ideas I have to use these up!

Monday ~ sausage cups, scrambled eggs, diced potatoes

Tuesday ~ pork fajitas, coconut rice, chips & salsa

Wednesday ~ crock pot bbq chicken, green beans, ramen noodles

Thursday ~ pasta, salad, garlic toast

Friday ~ leftover buffet!
