Can you believe that Thanksgiving is only 2 weeks away?! It seems to creep up faster and faster every year. One thing my DH and I look forward to this time of year are yummy pumpkin recipes! So I have decided to share some of our favorites with you. I posted Pumpkin Pie Squares several weeks ago. It is one we make over and over again! I have included the recipe for Pumpkin Chip Muffins in this post. More to come throughout the rest of the month.
Pumpkin Chip Muffins
Ingredients:
4 eggs
2 cups sugar
3 cups flour
1 16 oz can pumpkin
3/4 cup vegetable oil
2 tsp baking soda
2 tsp baking powder
1 tsp cinnamon
1 tsp salt
2 cups chocolate chips
Directions:
In a large mixing bowl beat eggs, sugar, pumpkin and oil until smooth. Combine flour, baking soda, baking powder, cinnamon and salt; add to pumpkin mixture and mix well. Fold in chocolate chips. Fill greased or paper lined muffin tins three-fourths full.
Bake at 400 degrees for 16-20 minutes or until muffins test done. Cool in pan for 10 minutes before removing to a wire rack.
Makes about 24 standard size muffins.
