1 1/2 cups butter
3/4 cup honey
1/4 cup brown sugar
3/4 cup flaked coconut
4 (4 oz) salmon fillets
- Melt the butter in a saucepan over medium heat, mix in honey, brown sugar, and coconut. Bring to a boil and remove from heat. Cool slightly. Place the salmon in the baking dish and pour butter mixture over, making sure salmon is good and coated. Cover and marinate in fridge for at least 30 minutes.
- Preheat oven to 375 degrees F.
- Remove baking dish from fridge after 30 minutes and let sit for a few minutes before placing in the oven.
- Bake for 25 minutes or until the salmon can be flaked easily with a fork. Discard leftover marinade or bring to a boil, cook for 5 minutes and spoon over salmon.
