Ingredients:
4 slices bacon
4 Tbsp. butter
1 medium onion, chopped
3 Tbsp. flour
1 tsp. salt

3 c. peeled and diced potatoes

Directions:
Chop bacon into small pieces. In a large pot, cook bacon until crisp. Remove with slotted spoon to drain on paper towels. Add butter and onion to bacon drippings and saute until tender, about 5 minutes. Stir in the flour, salt, and steak seasoning; mix until smooth. Gradually add the broth, then turn the heat up to medium-high and bring the soup to a boil. Add the veggies. Reduce the heat and simmer the soup, covered, until the vegetables are tender, about 20 minutes. Once veggies are tender stir in the milk.
Remove from heat and stir in cheese until melted. Let stand 5-10 minutes before serving. Ladle soup into bowls and top with cooked bacon pieces.
