Sauteed Cherry Tomato Sauce

Since we have an over abundance of tomatoes in our garden, I have been trying to come up with new things to do with them. I made salsa the other day to go with taco night. I have always done chunky salsa before and haven't been a huge fan of it. So this time I decided to put it in the blender and puree it...turned out more like the Mexican restaurant salsa we love.

The other thing I decided to try was homemade pasta sauce. I have never attempted this before so I was a little nervous but it turned out really good. {Not the best container but I didn't have a jar to put it in!}

Ingredients:
3 garlic cloves, minced
1 small onion
2 Tbsp olive oil
4 cups cherry tomatoes
salt and pepper
2 tsp dried oregano
1 tsp or less dried red pepper flakes
3 tsp dried basil
2 tsp dried parsley
15 oz can tomato sauce

Directions:
Puree the garlic in a food processor fitted with the chopping blade. Add onion and pulse 3-4 times, until finely chopped.

Heat oil in a large skillet over high heat until hot. Reduce heat to medium and add the onion and garlic. Cook, stirring occasionally, until softened...about 5 minutes.

Meanwhile, place cherry tomatoes in the food processor and pulse 5-6 times...I wanted to make it more smooth than chunky. {I had to do this in batches because my food processor is VERY small!}

Once all tomatoes are chopped, add them to the onion/garlic mixture. Also add in spices and tomato sauce. Cover and simmer, stirring frequently, about 15-20 minutes.

Serve with your favorite pasta!

I couldn't resist posting this cute pic I snapped of Little Bit. She has been having the cheesiest, head-tilted smiles but just recently she's started posing better. She has been having a blast celebrating her 2nd birthday this month. {Budget party ideas coming soon!}

Menu Plan Monday

Our garden is still overflowing...mostly with tomatoes! So I am trying to come up with some different ways to use them. I am going to make salsa to go with taco night...which we didn't get to last week. I am also going to try a recipe for some pasta sauce. If it turns out good I'll post it...keep your fingers crossed!!!

Yard Sale finds...

I love to garage sale but just haven't had a weekend free to do it in quite a while. There was a nice subdivision in town that was having one this weekend and I was determined to go...rain or shine...which it did a little of both! So this morning Little Bit and I ventured out. All items pictured I got for $2.30!

Little Bit got a Mrs. Potato Head for her birthday and is loving it...so when I saw this memory game for .50 cents I had to snag it.

The 2 Strawberry Shortcake dolls brought back memories...I had some as a kid. These were FREE!

I have been trying to do some activities with Little Bit lately that focus on life application skills. I thought the wooden letter blocks would be great for that. They have holes in them to be used for beading....great hand-eye coordination skill building!

Fall is in the air!

At least in my house it is! Fall is my favorite time of year. I just love the weather, beautiful colors and good food that comes along with it! Plus my precious Little Bit was born at the end of September!!! {I still can't believe she will be 2 next week!}

...homemade granola is in the crockpot {will let you know how that turns out}, pumpkin pie squares are in the oven and decorations are being dug out! Little Bit and I are dusting and preparing for pumpkins all around! Those sweet little pumpkins above we just picked from our garden!

I just love displaying sayings with these scrabble letters. I saw the idea in a magazine years ago and thought it was so neat! A friend of mine bought the game cheap and just wanted the board...so she gave me the letter tiles and stands.

Teriyaki Chicken

I had some peppers from the garden that needed to be used so I searched for a recipe. I found one that sounded good but it was for foil packets in the oven. I decided to try the ingredients and do the crockpot instead. Served over rice...this chicken dish turned out great!

Ingredients:

4 boneless skinless chicken breasts
1 cup teriyaki sauce
1 small onion
1 green bell pepper
1 small can pineapple chunks

Directions:
Place chicken breasts in crockpot...{I use frozen breasts that I buy in big bags when they are on sale}. Chop veggies and add on top of chicken. Then top with teriyaki sauce.

Cook on low for 8-10 hours. About an hour before you want to eat, add pineapple chunks.

Creative Corner...Owl Pillow

I have seen several variations on owl pillows lately and just thought they were too cute not to try and make one. So I free-handed a pattern and this is what I came up with! I just love how it turned out! This pillow will go on Little Bits bed once she moves out of her crib...not that I am wishing that anytime soon!

back from the {beach}!

As you might have noticed I haven't been posting this week....cause we were on vacation!!! We just got back from Florida late last night and I am trying to catch up around the house today. But I thought I would share a few pics from our wonderful time at the beach. Little Bit sure enjoyed herself. She loved playing in sand, finding shells and swimming in the purple bathtub {better known as...small hotel pool}! Our first night on the beach, after seeing the torch lighting ceremony at our hotel. Little Bit posing by one of the palm tree cabanas. A quick stroll through Seaside...enjoying the cool breeze and view of the ocean while Little Bit naps in the stroller.Little Bit kept grabbing the mask, saying "I go under"....of course she really didn't want to!

Creative Corner...Fabric Strip Bag

This bag was so easy to make. I just used some scraps of fabric that I had leftover from other projects. I decided how big I wanted the bag to be and then doubled that for the length of the strips. Once you cut your strips of desired fabric, stitch them together...I hemmed all sides of the bag after sewing strips together. Then fold the bag in half and stitch up the sides. I used the straight stitch and zig-zag for extra reinforcement. Then I was ready to add a strap. {Think this one is a little longer than I wanted but it works.} To finish it off, I added a 3 button cluster on the front of the bag!

Chicken Caesar Burgers

I can't believe that I haven't posted this recipe before now. It is one of my favorites! These burgers are super moist and just plain yummo! Speaking of yummo...I actually saw this recipe on the Rachel Ray show. She uses anchovies in hers but I thought yuck...so left them out! Here is the way I make them...

Ingredients:
1 package ground chicken breast {about 1 1/4 lbs}
3 cloves garlic, pressed or finely chopped
salt and pepper to taste
1 Tbsp worcestershire sauce
1 Tbsp dried parsley
1 Tbsp lemon zest
juice of 1/2 a lemon
2 Tbsp parmesan cheese

Directions:
Combine all ingredients in both and mix together well. Form into 4 round burger patties.

Heat a large non-stick skillet to medium to medium-high heat. Coat pan with cooking spray. When hot, add the chicken burgers and cook 3-4 minutes per side, or until no longer pink in the center.


...I usually serve them on a toasted bun with a lettuce leaf on top!

Creative Corner...Scrap Club

The DH and I recently celebrated our 10th anniversary! We took a day trip to St. Louis where we strolled through the botanical gardens, had some great food and enjoyed some shopping...well at least I enjoyed that part! So for my first layout of scrap club in August I featured pictures from our trip. "Adventure" was our title this month and I wrote "anniversary" in front of it. What a great color combo...digging the new SU Razzleberry color!

Kiddo Apron...

I stumbled across this fun blog {Dollar Store Crafts} the other day and found some great projects that I want to try. Among them was an apron for kids. Since Little Bit loves playing kitchen and we are starting to get into some craft projects together, I thought an apron would be nice for her to have. Well...let me tell you...this was super easy and cheap! It is made from a placemat! I found this plaid one at the my local dollar store and used ribbon that I had on hand. Too cute! All it took was a few swipes on the sewing machine and it was done. Check out the how to for the project here.

Crock Pot Chicken & Dumplings

These are super easy and yummo!

Ingredients:
4 skinless, boneless chicken breasts {I use frozen from a bag}
2 Tbsp butter
2 (10.75 ounce) cans condensed cream of chicken soup
2 cans {use soup can} of water OR chicken broth, if on hand
1/2 large onion, finely diced
salt and pepper to taste
1 Tbsp dried parsley
1 package (8 count) Grands refrigerated biscuits, torn into pieces

Directions:
Place all ingredients except biscuits in the crock pot. There should be enough liquid to cover the chicken...add more if needed.

Cover and cook on low for 8 hours. About 45 minutes before serving, shred the chicken and add in the torn biscuit dough to the crock pot. Cook until the dough is no longer raw in the center.
